PIZZA DOUGH & TOPPINGS

Ingredients (makes 2 large Pizza Bases)

Dough Recipe

480g Strong White Flour
2 Tablespoons of Olive Oil
1 Tablespoon Caster Sugar
1 Teaspoon Salt
7g (Sachet) Yeast
225ml Water

Preparation

Preparation Time 20min plus proving 1 1/2 hour

Cooking Time 12-15min

Oven Temperature 220c

Method

I have made several Pizza doughs and this is far the best. It makes two large Pizzas and once you have made and tried one you won’t be buying Supermarket pizza again! You can store a pre-prepared pizza in the fridge for 24 hours before cooking if you want or need to. The dough is simple to make and most of the topping you can buy pre-made however I do suggest you follow the Tomato sauce and spicy beef recipes include here.

 

Making the Dough

Add all ingredients into a bowl and mix together to form a dough

Take the dough out of the bowl and knead for approximately 4-5min

Place the kneaded dough back into the bowl and cover the bowl with cling film. Place the bowl in a warm area to allow the dough to rise.

When the dough has doubled in size (This takes approximately 1 ½ hours) take the dough out of the bowl and need for a further 1-2 min. Cut the dough in half and use each piece to fill a large pizza try.

Use a rolling pin to first form an even large circle dough then stretch with your fingers to make the dough fit the pizza try evenly.

Apply your choice of toppings. Traditional Tomato and Cheese plus your choice examples below or apply several as I do! (See below)

Pre-heat your oven to 220c and then place your pizza in the oven to cook for approximately 12-15 min Fan assisted 11 -12

Toppings

Pre-prepare the topping of your choice and apply cold to the pizza dough

Tomato base – Use small can of chopped tomatoes adding a teaspoon of oregano and a table spoon of tomato puree. Place these ingredients into a saucepan and cook on a low heat until the puree is cooked though and the contents have reduced in size but a quarter. Take off the heat and leave to cool. (Enough for two large pizzas)

Spicy Beef – 250g minced beef, two cubes of chill (frozen cubes or use a fresh chilli), a teaspoon of paprika, a tablespoon of Soy Sauce, Fresh ground black Pepper plus two tablespoons of oil for cooking.

Heat the oil in a saucepan adding the chilli cubes and paprika heat though until the oil has taken on the Chilli flavour / Chilli cubes have melted into the oil. Add the beef and cook though. Add the Soy Sauce and ground Pepper and stir though. Leave side to cool. (Enough for two large pizzas)

Cheese - 125g Mozzarella for each pizza cut into slices. Important you use a cheese that can take the heat Cheddar tends to burn.
